Why Am I Not Losing Weight Even Though I Track My Macros

I am being 100 percent honest when I say I track everything that goes into my mouth but the scale is not budging. I weigh my peanut butter and I even track the oil I use for cooking. I am at 1800 calories as a 6 foot male so I should be losing weight.
Is it possible that my metabolism is just slow? I am 35 years old and I work a desk job. I hit the gym five mornings a week. I am starting to wonder if I am underestimating my portions or if the labels on the food are just wrong.
Has anyone else dealt with this? It is so demotivating to see no progress when you are working so hard. I am considering going even lower with my calories but that seems dangerous. Maybe I should get some blood work done?
