How to Handle Hunger Pangs During Late Night Fasting

I am doing intermittent fasting and I find that the hardest part is the two hours before I go to sleep. My stomach starts growling and I find it really hard to focus. I usually stop eating at 8pm and I do not eat again until noon the next day.
I have tried drinking black coffee or herbal tea but it only helps for a little while. I am wondering if I should move my eating window later in the day so I am not as hungry at night. I am in the US and I work late shifts sometimes which makes it even harder.
Do you have any tips for staying disciplined during the fasting window? I really want to stick to this because I have seen good results so far but the hunger is making it difficult to get good sleep. Any advice would be greatly appreciated.
