I am a vegetarian but I eat a lot of eggs because they are such a cheap and easy source of high quality protein. I am looking for some new ways to prepare them so I am not just eating scrambled eggs every single morning.

I am trying to build muscle and I need about 160 grams of protein a day. I have been doing egg white omelets and hard boiled eggs for snacks. Does anyone have some more creative vegetarian recipes that use eggs as the main protein source?

I am in the UK and I would love some ideas for quick lunches or dinners that I can take to work. If you have any favorite spices or combinations that go well with eggs please let me know! I am really trying to stick to my diet while keeping things interesting.
